About the Role

This is a very small bar with a small team , There is no back of house areas so cellar management ia all in the bar area , We have a fantastic close knit team that work together amazingly. An assistant would need to have previous experience in a fast paced busy environment , Be able to manage the smooth running of the bar & have understanding of bar standards , Stock control , a sense of urgency in getting customers served as quickly as possible as well as being able to manage & task the team throughout. An understanding of Bar Management is essential due to the fast paced nature of the bar , Short opening hours and small team,

Key Responsibilities:

You will also be responsible for:

Coaching, developing, and acting as a role model to your team. Setting high service standards and training the team

Confident in Overseeing compliance with Health & Safety regulations , Record keeping , Licencing & all legal requirements required to run a the shift

Handling customer queries and resolving any issues

Assist in recruitment and training to company standards

Work alongside management regarding menu changes & Drinks standards and ongoing team standards training

Reviewing weekly business to address successes and opportunities for improvement with revenue, guest measures, and payroll & events

Overseeing the cellar, stock control and bar training, Monitoring / Troubleshooting stock loss
Understanding of GP & costings of stock , Sales & upsales

Identifying opportunities to drive profit, create value for guests, and encourage innovation

Ensuring that your team are informed, motivated, engaged, and developed, to deliver operational excellence
Stock control , stock ordering , stock taking , record keeping & managing stock loss
Banking , Cashing Up - Cash control & P&L Management
Health & Safety Compliance - Signing off daily / weekly / monthly checks
Promotions , Social Media , Marketing , Website updating
Managing Social media queries & interactions
Being able to set up for events and communicate with vendors
Taking in deliveries , Getting all stock safely out of delivery boxes and stocking the fridges and the bar
Setting Up the Bar & overseeing its operation
Taking Table reservations , communicating with bookings , setting up tables as per customer requests
Promoting live music events
Keyholding responsibilities / Liaising with vendors / access & Alarm calls
Reporting & logging and issues or faults to relevant suppliers / companies
Being able to run the venue in the absence of the GM
Opening and closing the venue in good time & managing staff during closedowns
Food Prep knowledge for preparing & setting up the cocktail bar
Capable of understanding handover information , Floor Plans & Run sheets
Multi Site Availability - May sometimes have shits at the sister venue in Bromsgrove
About you

The ideal candidate will have a proven food & beverage background within high-end hotels or cocktail bars. They should be experienced with regards high volume.

You will also have:

Outstanding leadership skills that inspire and motivate others to deliver exceptional results

Absolute commitment to guest expectations & their experience

Personal integrity to develop trust within their team

Experience in cellar management and stock control

Experience in making rotas and managing payroll
Capable of understanding handover information , Floor Plans & Run sheets
MUST be aware of surroundings & able to manage the running of a shift as the highest management on shift. Such as keeping ontop of the genral safety of customers and staff, keeping the standards high , keeping the venue safe , keeping the atmosphere ( making sure sound , light, temperatures, are correct throughout

COCKTAIL WAITRESS

About the Role

As a Cocktail Waitress at The Dry Spy Knowle, you'll be the face of our venue, delivering exceptional table service in our stunning 1920s Art Deco setting. You'll work alongside our talented mixologists and live musicians to create unforgettable experiences for our guests.

Key Responsibilities:

Provide warm, attentive table service to guests throughout the evening
Take orders accurately and use our ticket system to collect dispensed cocktails from the bar
Deliver cocktails, wines, and bar nibbles with flair and attention to detail
Maintain knowledge of our signature cocktails (including our famous Naughty Lemonade) and multi-buy offers
Ensure tables are clean, well-presented, and ready for guests
Maintain venue standards and cleanliness throughout your shift
Handle payments efficiently using our Square POS system
Create a welcoming, friendly atmosphere that embodies our 1920s speakeasy vibe
Work collaboratively as part of a team with bartenders, hosts, and barbacks during busy service
Assist with private hire events and special occasions
Be willing to learn about cocktails and our drinks menu

Previous experience in hospitality, waitressing, or table service (preferred but not essential)

About the Role

As our Front of House Host, you'll be the first point of contact for guests entering The Dry Spy Knowle. You'll set the tone for their evening, managing reservations, welcoming guests with warmth and professionalism, and ensuring smooth operations throughout service.

Key Responsibilities:

Meet and greet guests outside the venue as they arrive, creating a warm first impression
Welcome guests at the door and manage entry during peak hours
Oversee table reservations via Squarespace and Design My Night booking systems
Seat guests efficiently, managing table turnover and maximizing capacity (up to 60 guests)
Answer phone calls and respond to Instagram DMs regarding bookings and enquiries
Coordinate with bartenders and waitresses to ensure seamless service as part of the team
Manage the flow of guests during live music events (Friday & Saturday, 9–11pm)
Handle customer queries, special requests, and any concerns with professionalism
Maintain venue standards and cleanliness at the entrance and throughout front of house areas
Assist with crowd control and work with door staff during busy periods
Process payments and manage the Square POS system
Promote upcoming events, special offers, and private hire opportunities
Be willing to learn about our cocktail menu to answer guest questions

What We're Looking For:

Previous experience in hospitality, front of house, or customer service roles (preferred)
